I meant to blog, I really did! But somehow, as soon as I hop on the train and head up the Hudson, I completely disconnect. I forget I own a cell phone, let alone a wireless computer! Technically, I had a wireless computer a year before I got a cell, but you understand what I mean ;).
But I am back and I have a one month countdown until my trip to Spain to really get in shape! Maybe I’ll call it my Spain-bound shape up. The Tone It Up girls are requesting 45 minutes of cardio and 30 minutes of weights everyday this week! Fortunately, they have a lot of fun strength options! So far, so good, but I have to say, it’s going to be a challenge!
In other challenge news, here’s my Salad of the Day!
Romaine, snap peas, nectarine, carrot, cucumber, goat cheese and tempeh.
My mom got the Creo Chopped: Romaine, carrots, zucchini, squash, cucumber, red onion, red pepper, buttermilk ranch with shrimp. It looked awesome—I wish I had her willpower.
Frank got the filet which came with a caprese salad and grilled zucchini topped with pesto. He actually took the photo himself, so he could start eating sooner, it looked that good!
I was torn between two dishes, but fortunately my dad was too! We split the Halibut with Maine Lobster, sweet corn puree, haricot vert, fingerlings, tartar sauce. It was amazing, perfectly seared. We also shared the goat cheese, fig and balsamic pizza. This was almost like dessert, the balsamic was a little overpowering, so the other ingredients got a little lost. I was glad I tried it, but I was also glad it wasn’t my full dinner!
The next morning we got up to go golfing!
My golf game had ups and downs. I did make par once. Hopefully I can eventually take lessons and become more consistent.
The rest of our weekend flew by. Saturday night we saw DMB and SPAC. Sunday we had a delicious brunch with my nieces at The Ripe Tomato and then a quick stop at CDI and we were already on our way home :(. Hopefully we can get up again soon.
